Traditional Pahadi Cooking Method
Step 1
Wash and soak the dal for 8-10 hours.
Step 2
Pressure cook for 5-6 whistles until soft.
Step 3
Prepare a tempering with desi ghee, cumin, asafoetida (hing), garlic, and ginger.
Step 4
Add turmeric, coriander powder, red chilli powder, and salt.
Step 5
Simmer for 10-15 minutes for a rich, thick consistency.
Serve hot with steamed rice or traditional Pahadi accompaniments.
